I'm Baaaack

Well lookie here! It seems I've dropped off on my blogging duties since graduating college and joining the real world. But, for anyone who cares, I'm back in the saddle for at least for another Lenten season. This year I've decided to give up red meat, poultry, and other game and live like a vegetarian (an ovo-lacto-pesco-vegetarian for those who like to nit-pick) for no less than 40 days and 40 nights. The nights shouldn't be to hard; it's the days I'm worried about.

In preparation for this endeavor, I acquired a new Betty Crocker vegetarian cook book. I've also inquired with vegetarian friends for tips. And, most important of all, I didn't buy meat while on my weekly food run at Safeway yesterday.

I expect it will be interesting cooking without meat and equally so cooking with things like tofu and soy product. So I'm blatantly stealing an idea from one of my best friend's blogs - I've decided to share my most interesting vegetarian moments and recipes. I haven't made anything special yet (unless you count my kick-ass salad I made for dinner tonight in which I mixed spinach, blueberries, pear, avocado, tomato, and onion and topped that with some balsamic), but I'm going to shoot for at least a post a week. So to anyone who is reading this - enjoy the next 6 weeks of my ramblings!

I'll bet that your mother would be a double p a double l ed at all the fruit in a nice green salad. Interesting to me that it all really DOES taste good with balsamic.... of course.... most things do :)
